Recently, I fell in love with a pancake mix made by Simple Mills that I found at one of our local health food stores (Sprouts—LOVE that place!).
I decided I could make a copycat recipe and save some money, so I concocted the following combination of deliciousness! (Hint: the organic vanilla powder is what I think MAKES this recipe! I buy it on Amazon)
Ingredients:
- ½ cup almond flour
- ¼ cup arrowroot flour
- 1 Tbsp coconut sugar
- ½ Tbsp coconut flour
- ½ tsp cream of tartar
- ¼ tsp baking soda
- pinch of salt
- 1 tsp vanilla powder (or liquid extract)
- 2 eggs
- 2 Tbsp almond milk
- 1 Tbsp oil (I usually use avocado oil)
Mix all ingredients and pour onto a hot skillet in whatever size pancakes you desire! This makes about four medium pancakes. You can easily make bigger batches by doubling or tripling the ingredients.
