These bars are perfect to make ahead and freeze in single servings for breakfast on the go! SO easy and quick to make, and they taste yummy!
- 1 ¼ cup blanched almond flour (not almond meal)
- ¼ tsp sea salt
- ¼ cup coconut (melted) or grapeseed oil
- 2 Tbsp honey or agave
- 1 Tbsp water
- 1 tsp vanilla extract
- ½ cup unsweetened shredded coconut
- ½ cup pumpkin seeds
- ½ cup sunflower seeds
- ¼ cup raisins or dried cranberries
- ¼ cup blanched slivered almonds
Add almond flour and salt in a food processor and pulse to combine.
Add oil, honey, water, and vanilla and pulse to combine.
Mix in coconut, seeds, nuts, and raisins. Pulse until all are chopped up into tiny bits.
Grease an 8×8 inch baking dish with oil.
Press the dough into the baking dish, wetting your hands with water to help pat the dough down evenly.
Bake at 350 degrees for 20 mins. Cool bars in pan for 2 hours. Cut into individual servings.
Serve or store in the refrigerator or freezer in Ziplock bags.
